EAU CLAIRE PASTRY

1 C. WATER
˝ C. BUTTER (one stick)
1 C. FLOUR
4 EGGS, ROOM TEMPERATURE

FILLING:

1 PACKAGE INSTANT FRENCH VANILLA PUDDING
1 PACKAGE INSTANT REGULAR VANILLA PUDDING
2 ˝ CUPS MILK
1 tsp.. VANILLA
1 (8 ounce) CONTAINER COOL WHIP

TOPPING

2 SQUARES BITTER CHOCOLATE
1 C. POWDERED SUGAR
2 T. MILK
2 T. MELTED BUTTER
NUTS OPTIONAL

PASTRY: PUT WATER IN KETTLE. ADD BUTTER AND BRING TO A BOIL. ADD FLOUR ALL AT ONCE STIRRING VERY BRISKLY. PUT IN ELECTRIC MIXER BOWL AND COOL SLIGHTLY. ADD EGGS ONE AT A TIME UNTIL EACH IS WELL BLENDED. DROP ON PIZZA PAN BY LARGE SPOONFULS PULLING “UP”. BAKE AT 400 FOR 50 MINUTES. TRY NOT TO PEEK. COOL.
FILLING: BEAT UNTIL FLUFFY.
TOPPING: CAREFULLY SLICE OPEN PASTRY RING. FILL BOTTOM LAYER WITH FILLING AND PLACE TOP BACK ON. DRIZZLE TOPPING AND NUTS. CHILL 2 HOURS.
