1 big can San Marzano whole tomatoes
1/4 cup olive oil
5 cloves garlic
1 lb San Palmodora sausage (or really good sausage)
3 Tblsp red wine
1/8 tsp nutmeg
red pepper flakes
1/2 tsp dry basil
fresh parmesan, 1/4 cup or more)

Directions:
Directions:
Infuse garlic in the olive oil on medium low in a saucepan until crunchy. You may need to angle the saucepan. Take garlic out.Food process the tomatoes and add to the garlic oil. Add half can of water and mix. Add red wine, 2 dashes of nutmeg, red pepper flakes, pepper, and salt. Simmer down with sausage in it until you get the right consistency. Add lots of fresh parmesan at the end.
