1 tablespoon olive oil
1 cup finely chopped onion

1 cup (fresh) diced tomatoes
1 can (15 oz) black beans (drain and reserve juice)
˝ cup chopped cilantro (more if you like)
˝ teaspoon thyme
1 teaspoon garlic salt

3 tablespoon cider vinegar
˝ teaspoon pepper sauce (more if you like)

2 cups cooked rice

Directions:

Heat olive oil in large skillet and cook onion until tender. Add tomatoes, black beans, cilantro, thyme and garlic salt – sauté for about 3-4 minutes. Add vinegar, pepper sauce and reserved bean juice and continue to cook additional 5 minutes. Serve over cooked rice.
