3 C flour
1/4 tsp baking powder
1 tsp baking soda
2 C sugar
1 tsp salt
1 T cinnamon
3 eggs
1 C oil
1 tsp vanilla
2 C grated fresh zucchini

Directions:
Directions:
Preheat oven to 325º.

In a mixer, blend eggs, oil and vanilla until creamy.
Add dry ingredients, mixing until smooth.
Add zucchini and stir, mixing well.

Place into 2 greased loaf pans.
Bake for 1 hour at 325º until done in center (test with a toothpick).

For best results, grate your own fresh zucchini in a food processor. Using frozen grated zucchini doesn't work, bread will be too dense.
