Ingredients: 1 Tbsp margarine (or butter) 1 1/2 tsp per pan 1/4 Cup Fine Dry Bread Crumbs (2 tbsp per pan) 4 Large Eggs 1/2 Tsp Seasoned Salt 1/2 Tsp Onion Salt 1/2 Tsp Lemon Pepper 1/2 Tsp Parsley flakes 3 Cups Mashed Potatoes
Sauce 1 3/4 Cup Milk 1/3 Cup Flour 1 Tsp Salt 1/4 Tsp Pepper 1/4 Tsp Onion Powder 1/4 Tsp Paprika 1 Cup Grated Cheddar Cheese
3 Cups Cooked Mixed Vegetables, cut bite size

Directions:Line two 9 inch round layer pans with foil. Grease foil with margarine. Coat pans heavily with bread crumbs. Combine next ingredients in medium bowl. Spread 1/2 of potato mixture in each pan. Bake in 400ºF oven on center rack for 30 minutes until browned. Keep warm. Sauce: Gradually whisk milk into flour in medium saucepan until smooth. Add salt, pepper, onion powder and paprika. eat and stir until boiling and thickened. Stir in cheese until melted. Stir in vegetables. Heat through. Turn one potato layer onto plate. Peel off foil. Cover with 1/2 of vegetables. Turn out second layer on top of vegetables. Pour remaining vegetable on top. |

Notes: Meaty Potato Cake: Stir 34 cup diced hot wieners into sauce. Bean Potato Cake: Omit cream sauce and vegetables. Spoon warm beans in tomato sauce between and on top of layer. Chili Potato Cake: Omit cream sauce and vegetables. Spoon your own warm, homemade chili between and on top of layers.
