1-4 T. butter or margarine
2 small white onions thinly sliced
2 large celery ribs, scraped and thinly sliced
2 large carrots, scraped and thinly sliced
3 cups chicken broth
3 medium zucchini, unpeeled and cut into quarters lengthwise and sliced thin
salt and pepper to taste

Directions:
Directions:
1. In a heavy soup pot, melt butter or margarine and saute onions, celery and carrot with about 1 T. salt until soft. Stir in 1/2 cup broth and zucchini and cook until zucchini is tender, 10-12 minutes.
2. Add remaining broth and simmer slowly until vegetables are tender, but still hold their shapes. Season to taste.
3. Serve not, sprinkled with cheese if desired.

May also add chopped fresh garlic in the beginning, and chopped basil at the finish if desired.
