4-6 boneless chicken breast [boiled and shredded]
1/2 onion chopped well {saute in oil, drain]
46 oz. Can V-8 Picante flavored juice
46 oz. water
1 tbsp.mendudo spice mix
1tsp. cayenne pepper
1 tsp.garlic salt, or 2 small cloves chopped
1 lg. can whole kernel corn
2 cans rotel tomatoes
bundle of cilantro, chopped fine

In a large stewing pot, mix all ingredients together, stirring well. simmer 30 to 45 minutes. ladel into a bowl. grate kolby- Monterey jack cheese over soup.
serve with mission tortillas strips chips.

. this soup makes a lot... it can also be frozen... I use this soup during Super bowl parties. Some time I find it difficult to get the picante flavored v-8 juice,so i get the hot ,and mix it with regular v-8.
