2 eggs
4-oz. pumpkin or squash
1/4 tsp. cinnamon
1/2 tsp. vanilla
4 tsp. sugar
1 slice bread, crumbled
1 c. milk

Directions:
Directions:
Slightly beat 2 eggs and add 4-oz. of pumpkin or squash with 1/4 tsp. cinnamon and 1/2 tsp. of vanilla. Mix all together and then add sugar, 1 slice of crumbled bread and 1 c. of milk. Microwave on simmer for 13 minutes. May make sweeter if desired.

Aunt Ruth was my favorite because she came to visit once a month and did all my ironing because she liked to and I didn't. She was Glenn's aunt so when he became a diabetic she looked for or tried recipes that he could eat and this was one of them.
