Shortbread:
1 1/2 cup butter
3/4 cup powdered sugar
2 1/4 cup flour
1 1/2 T cornstarch
Filling:
1 - 8 oz. softened cream cheese
1 can Eagle Brand milk -low fat will work
1/3 cup lemon juice
1 tsp. vanilla

Directions:
Directions:
Mix shortbread (do not roll out) and pat into miniature muffin tins (I use the Pampered Chef wooden tapping tool to form in tins) Prick bottom and bake 20 minutes at 315 deg. They freeze well.
Filling: Mix all 4 ingredients together and beat until fluffy. Fill tarts and top with small slice of kiwi or strawberry or fruit of your choice.
