Bread Dough:
1/4 c. warm water, 105- 115 degrees (very important to activate yeast)
1 pkg. yeast or 2 1/2 tsp.
pinch sugar
1 c. milk
1/4 c. butter
1/4 c. sugar
1 tsp. salt
3 1/2 c. flour
1 egg

Cheeseburger Bierocks:
1 lb. hamburger
1/3 c. chopped onion
1/3 c. ketchup
2 tbsp. spicy brown mustard
1/3 c. chopped dill pickles
4 oz. cheddar cheese slices

Cabbage Bierocks:
1 lb. hamburger
1/2 head cabbage, chopped
chopped onion (optional)
salt and pepper to taste

Dough Directions: Mix warm water, yeast and sugar set aside. Yeast should foam up. Warm milk, butter, sugar and salt in microwave or sauce pan to about 115 to 120ºF. Add egg and beat. Add yeast mixture. I use my kitchen aid mixer to mix. Then gradually add flour, mix with dough hook until smooth. This is not a stiff dough. Cover and set aside.
Cheeseburger Bierocks:
Brown hamburger with onions, drain. Add ketchup, mustard and chopped pickles, salt and pepper to taste. Divide roll dough into balls about the size of a large egg. Roll out to about 6 inch circle. Put about a 3 inch square of cheese in middle of dough. Add 1/3 c. hamburger mixture and pull dough around mixture and pinch together. If you have to much dough at bottom of roll pinch off so the bread at the bottom isn't too thick. Place pinched side down on baking pan, being sure to space a couple inches apart for rising. Bake at 350ºF for 15 - 20 minutes, until golden brown. Brush with butter and enjoy!
Cabbage Bierocks:
Brown hamburger in large pan or wok, then drain grease. Add chopped cabbage and cook until cabbage is tender. Roll out dough into 6 inch circles, add about 1/2 cup hamburger cabbage mixture. Sometimes I add cheese to the mixture. Bake at 350ºF for 15 - 20 minutes.

I usually make at least 2 lbs. at a time so we have leftovers. They freeze well and are great warmed up for several days.
