6 thick pork chops
1/2 c. chopped onion
1/2 tsp. oregano
1 c. herb seasoned stuffing mix (boxed stuffing and I usually use pork or chicken flavored)
1/3 c. water
2 T. butter
salt/pepper to taste
10 oz can pizza sauce
(8 oz) can tomato sauce
2 c. shredded mozzarella cheese

Cut pockets into 6 thick pork chops (basically cut down middle but not completely through the long way) Mix 1/4 c. onion with 1/2 tsp, oregano and 1 c. herb seasoned stuffing mix prepared as box directs only using 1/3 c. water and 2 T. butter. Lightly stuff pockets of chops with the mixture. Season with salt and pepper. Place in a baking dish. Combine the pizza and tomato sauce. Pour over meat. Cover tightly with foil. Bake at 350º for 1 1/2 hours. Remove foil. Top with shredded mozzarella the last 15 min. of baking but leave covered.
