Pancakes:
1/2 cup flour
1/2 cup milk
6 eggs

Fillings:
Butter
Jam or Jelly
Fresh fruit; raspberries, strawberries, peaches, pears or apricots.

Toppings:
Powered Sugar
Whip Cream

Directions:
Directions:
Mix all ingredients in a blender. Let batter settle a minute and pour a thin layer onto a medium hot pan with a little oil. Roll pan around to make an even round pancake and turn over to cook on the other side. Place onto a plate, add pat of butter, a teaspoon of jam or jelly and fresh fruit, then roll-up the pancake similar to crepes. Optional toppings; dust with powder sugar and/or whip cream.

Batter size can be reduced or increased in size from three eggs & 1/4 cup of milk & flour to a dozen eggs & 1 cup of milk & flour.
