2 T olive oil
1 red onion, sliced THIN
2 cloves garlic, chopped
1 red, yellow and green peppers, sliced in long thin strips, julienne style
1 C chicken broth
1/2 tsp crushed red pepper flakes (or more if you like a little spicier)
1 and 1/2 C heavy cream
1/4 C cilantro, chopped
1/4 C Parmesan cheese
Linguine noodles
4 boneless, skinless chicken breasts

Directions:

Pound the boneless chicken breasts thin and coat them in a thin layer of flour and salt and pepper.
Brown in olive oil.

When done take out of pan, and put on plate in warm oven to keep them warm.

In same frying pan you cooked chicken, add more olive oil and saute the red onion. Add garlic, then the pepper slices. Saute for one minute.

Add chicken broth and red pepper flakes. reduce heat just slightly and stir in the heavy cream and cilantro. Add in the Parmesan cheese and STIR.

Boil the linguine noodles.

Separately, slice the cooked chicken and now add to the frying pan on top of pepper/onion/ cream mixture. STIR.

Put linguine noodles in serving dish and pour pepper/chicken/onion and cream mixture over noodles and serve.
