Pierogi Dough
2 cups of flour
1 egg, plus one egg yolk
1/2 teas salt
1 teas melted butter, do NOT substitute margarine

Cheese Filling
1 lb Farmers Cheese
1 egg, beaten
1 egg yolk
1 tablespoon of lemon juice

Directions:
Directions:
Mix all ingredients for filling together in a bowl and refrigerate.

Combine all ingredients together for the dough. Knead into a pliable ball and let rest for about 10 minutes, covered with a warm bowl.

Divide the dough in half, cover the remaining half with a warm bowl. Roll out to desired thickness on a floured surface and cut with a circle cutter (should be thickness of ravioli). Place a spoonful of cheese mixture on one piece of dough, moisten edges of dough with water before firmly pressing another piece on top and sealing edges with a fork. Drop them into boiling water for about five minutes or until they float to the top. Take out of water and serve with sauce or fry them in butter. Serve with butter or sour cream.
