4 lb. yellow squash, sliced
1 large finely chopped sweet onion
1 c. shredded cheddar cheese
1 c. mayonnaise
2 tbsp basil or Italian Seasoning
Crushed Garlic
Olive Oil
Salt
Pepper
2 large eggs, lightly beaten
2 cups breadcrumbs
1 l/4 c. shredded Parmesan Cheese
2 tbsp melted butter
l/2 c French fried onions

Directions:
Directions:
Cook squash and onion in sauce pan with olive oil, garlic, and seasonings until tender. Don't overcook. Drain well.
Combine squash mixture with mayonnaise, eggs, cheddar cheese, 1 cup breadcrumbs and 3/4 c. Parmesan cheese. Spoon into baking dish.
Stir together melted butter, french fried onions, remaining breadcrumbs, and Parmesan cheese. Sprinkle on top.
Bake 35-40 minutes on 350º
