1 pound okra
3 ea; Tbsp. canola oil & butter
1 medium onion chopped coarsely
1 green pepper chopped
4 large tomatoes, peeled, seeded, chopped
1/2 cup dry white wine
2 Tbsp. lemon juice
1 Tbsp. fresh cilantro - chopped
salt and pepper
1 pound shrimp; peeled, deveined.

Rinse the okra, pat dry, and cut into 1/4 " thick rounds. Heat oil and butter in large skillet till the butter is melted. Add onion and green peppers and toss to coat evenly. Stir in the okra and cook over medium heat till the onion is limp. Add tomatoes, wine, lemon juice, cilantro, salt and pepper. Simmer, stirring occasionally, till the tomatoes begin to disintegrate. Add the shrimp and continue cooking for 3 minutes, or till the shrimp turns opaque. Spoon over hot rice to serve.
