1 acorn squash
2 apples, cored and cubed
1 Tbsp. olive oil
1 Tbs. honey
1-2 Tbsp. finely chopped walnuts (or pecans)
1/2 tsp. ea: ground cinnamon and salt

Directions:
Directions:
1. To easily peel squash, gently drop the squash in a large pot of boiling water and boil for 15 minutes. Pour off water and fill with cold water and let sit 5 minutes to cool. When cool, use a knife to slice off the peel on the ridges and use a teaspoon to dig out from the peel in the valleys. slice the squash in half and remove seeds and stem. Then slice halves into section and finally cut into 1 inch chunks. 2. Place squash into large microwave bowl (or pampered chef steamer bowl) along with the apples. Dot w/ pieces of butter. Sprinkle brown sugar, walnuts, salt and cinnamon over the top. Cover with glass lid but set askew to vent. 3. Cook in microwave for 7 &1/2 minutes on full power. Remove from microwave and stir, Return and cook for another 7&1/2 minutes till tender. Serve hot.

May use butternut squash instead acorn squash. Honey or maple syrup can also be used instead of brown sugar.
If you prefer roasted squash, pour 1/4 cup water in baking pan and place squash in the uncovered pan. Bake at 350º for just under an hour
