1 large head romaine lettuce
1 clove garlic, halved
1/2 c olive oil
1 c bread cubes, crusts removed
3/4 tsp salt
1/4 tsp dry mustard
1/4 tsp pepper
1 1/2 tsp Worcestershire sauce
1 tsp anchovy paste
1 egg
1/4 c blue cheese
2 tbsp grated Parmesan cheese
2 tbsp lemon juice

Wash and drain romaine. Tear leaves into bite-size pieces, dry well and chill. Crush 1/2 clove garlic; combine with olive oil. Heat 2 tbsp garlic-oil; add bread cubes and saute until brown. Set aside. Add salt, mustard, pepper, anchovies and Worcestershire sauce to remaining garlic-oil mixture; shake and refrigerate. Place egg in boiling water, turn off heat and leave for 1 minute. Just before serving, rub large salad bowl with other half of garlic clove; discard. Arrange romaine in bowl; sprinkle with cheeses; drizzle dressing over and toss gently. Break egg onto centre of salad. Pour lemon juice over all and toss well. Sprinkle with bread cubes and toss.
