6 c. shredded Monterey Jack cheese
1/4 c. butter
3/4 pounds sliced mushrooms
1/2 pound cooked ham cut into thin slices
1/2 medium onion, chopped
1/4 c. thinly sliced red bell pepper

8 eggs
1 3/4 c. milk
1/2 c. flour
6 T. parsley
Salt and pepper to taste

Directions:
Directions:
Sprinkle 3 c. of cheese in a greased 9x13 pan. Melt butter and saute mushrooms, pepper, and onion until tender. Drain and spoon over cheese. Put ham over veggies and sprinkle with remaining cheese. Cover and refrigerate overnight. In the morning, preheat oven to 350º and combine egg, milk, flour, and parsley. Pour over cheese. Bake at least 1 hour.
