5 lb. pork roast (remove bone and outside fat, cut into 1 - 1-1/2 inch cubes
1-1/2 c. flour
2 tbs. ground cumin
2 tbs garlic granules (Schillings brand)
2 tsp. red pepper flakes
1/2 c. light vegetable oil
6 medium white onions, chopped
6 cloves of garlic, pressed or minced
2 lrg. can (26 oz) whole chilies, chopped
30-35 medium fresh green tomatoes, coarsely chopped
1-2 bottles (12 oz) seasoned rice vinegar (basil and oregano flavored)
3 medium fresh chili peppers, finely chopped
2 medium fresh Jalapeņo chili peppers, finely chopped
1 bunch fresh cilantro, chopped or enough to taste
salt to taste.

In pot, heat oil and brown pork with garlic granules, onion and Jalapeņos. Add cilantro and cumin. Cook 2 minutes stirring frequently. Slowly add rest of the ingredients. Stir well to remove sticky flavor from bottom of pot. Reduce heat and simmer.

Serve with cheese, tortillas and rice.
