5 slices bacon
1 onion (diced)
3/4 Cup carrots (chopped bite size)
1 clove garlic (minced)
1/8 tsp. thyme
1/8 tsp. sage
1/2 bay leaf (crumbled
1/2 tsp. salt
dash pepper
1 1/2 lbs. beef chuck roast (cut in 1 inch cubes)
1/4 Cup flour
2/3 Cup white wine
1 ounce brandy
3/4 Cup beef broth
1-8oz can diced tomatoes (drained)

Directions:

Cook bacon in skillet until crisp. Drain and crumble.
In large bowl, combine bacon, onions, carrots, garlic, thyme, sage, bay leaf salt and pepper.
Line bottom of casserole dish or Dutch oven with 1/4 of vegetable mixture. Shake beef cubes in flour and layer half over vegetables. Top with 1/2 of remaining vegetables. Continue layering beef and vegetables until gone. Add all remaining flour mixture from beef to meat layer. Finish with vegetable layer on top.
Pour wine, brandy, broth and tomatoes over stew. Add water if necessary, to cover vegetables. Bring to simmer on top of stove. Do not stir. Cover and bake in 325º oven for 3 hours.
