Cooking oil
2 chicken breast halves, cut into chunks
Seasoned salt (optional)
1/2 large onion, chopped
3-4 cloves garlic, minced
1 14 oz can black beans
1 - 1.5 cups corn (fresh, canned, or frozen)
1 14 oz can diced tomato (fresh tomato is always good too)
1 bunch cilantro, chopped
Extra virgin olive oil
Juice of 2 limes

Add some seasoned salt (if desired) to chicken and cook it in a little oil until cooked through. Remove from heat and set chicken aside. Add a little more oil to the pan and saute the onion and garlic until they are translucent, then add the drained beans and corn (drained if canned corn) until all is hot. Remove the pan from the heat and add the drained tomato and chopped cilantro. After washing the limes, cut them in half and juice them over the pan. Add a little olive oil and mix the salad. Serve the salad on a plate and spoon some chicken on top of the salad. Enjoy!

Often I use canned ingredients in the interest of time. However, if you have more time, I think fresh ingredients always taste a little better. You can also get creative with this recipe and add other veggies you like. The idea is that part of the food is hot (the onion, garlic, corn, and beans) while the rest (tomato, cilantro, and dressing) is cold.
