1/2 C GARLIC MINCED
8 C CHICKEN OR BEEF STOCK
1 C GREEN ONION
1/2 C PARSLEY
SALT/PEPPER/CAYENNE PEPPER/HOTSAUCE
TO TASTE
5 C PARBOIL RICE

FOR RED RICE JAMBALAYA
3 CANS ROTEL TOMATOES
1 LARGE CAN OF TOMATO SAUCE

IN 8 QT POT

SAUTE CHICKEN, SAUSAGE

ADD CHOPPED ONIONS CELERY, BELL PEPPERS AND GARLIC

COOK UNTIL ALL VEGETABLES ARE CARAMELIZED

POUR IN STOCK

BRING TO A ROLLING BOIL, THEN REDUCE TO SIMMER

COOK 15 MIN TO ALLOW FLAVOR TO DEVELOP

STIR IN GREEN ONIONS AND PARSLEY

ADD SALT/PEPPER/CAYENNE PEPPER AND HOTSAUCE

FOR RED JAMBALAYA ADD INGREDIENTS

ADD RICE

REDUCE TO LOW COVER AND COOK

STIR EVERY 15 MIN
