4 - 5 boneless, skinless chicken breasts; cooked and diced
salt and pepper
2 chicken bouillon cubes
2 stalks of celery, diced
1 sm. onion, diced
3 tbsp. butter, divided
1 can cream of mushroom soup
2 c. chicken broth plus 2 tbsp.
3 c. Pepperidge Farms Herb Seasoned Stuffing (the blue bag)

Directions:
Directions:
Preheat oven to 350ºF. Saute celery and onion in 2 tbsp. butter until tender. Add chicken, soup, 2 cups of stuffing, and 1 cup of broth. Stir and add more broth if need until it is the has the consistency of oatmeal. Stir to combine and pour into a casserole dish. Melt 1 tbsp. butter with broth, add remaining stuffing stir to moisten. Sprinkle mixture over casserole and bake for 30 min. or until topping has lightly browned and casserole is bubbling.
