Dutch oven with heavy lid
1 lb beef or moose flank, cut into stew chunks.
oil for sauteeing
1/4 cup flour
thyme
salt and pepper
2 cups beef or chicken broth
10 garlic cloves, rough chop
4 carrots rough chop
yellow cherry tomatoes cut in half
4 potatoes rough chop
butter
red wine

Directions:
Directions:
Mix together flour salt and pepper and thyme and dredge beef chunks. Retain leftover flour. Saute in oil, brown evenly. When browned put in dutch oven or soup pot with broth and put enough water to cover. Put on lid and simmer for about an hour. Do not clean saute pan, pour in 1/4 cup of red wine and 2 T butter or to taste and swirl in pan with heat on til butter melts and the meat bits are loosened. Pour in dutch oven with meat. Meanwhile, use cooking oil and saute carrots, potatoes, onions, and garlic cloves until lightly browned, Add sliced tomatoes directly into stew. Add to stew leftover flour mixture from dredging. Add in sauteed veggies and let cook for an additional 30 min or until tender. Continue to cook for a few minutes and taste, season with salt and pepper to taste.
