2 qts. water
1 qt. shrimp ( peels on)(you can use frozen or fresh)
3 Tbsp. Zatarain's shrimp & crab boil
1/4 tsp. black pepper
1/8 cayenne pepper
3 small bay leaves
1/2 medium onion, cut in half
1/2 lemon, cut in half, squeezed
1 Tbsp. vegetable cooking oil
1/4 cup table salt
3 Cups ice cubes

In a 4 - 6 qt. heavy aluminum pot, put in water, onion, peppers, bay leaves, lemon & juice, oil and crab boil. Bring to a full rolling boil and allow to boil for about 3 minutes. Add shrimp and set timer for 5 minutes and return to a boil. When shrimp start to boil - watch carefully for shrimp to pull away from shells (may be less than 5 minutes). Remove from heat and add salt and stir to melt salt. Let soak for 3 minutes. Pour some of the water out and add ice to cool water and shrimp, let soak with ice for another 3 minutes. Drain in a colander.

These shrimp can be eaten with the cocktail sauce or seafood dipping sauce. Can be used to make shrimp dip or remoulade salad.
