9" pie crust
1 1/2 c. shredded Swiss cheese
1 lb. cooked bacon, crumbled
2 c. chopped fresh baby spinach, packed
salt & pepper to taste
6 lg. eggs, beaten
1 1/2 c. heavy cream

Directions:
Directions:
Preheat oven to 375ºF. Fit the pie crust into a 9" pie plate. Combine eggs, cream, salt & pepper in a food processor or blender. Layer the spinach, bacon and cheese in the bottom of the pie crust. Then pour the egg mixture on top. Bake for 35-45 minutes until the egg mixture is set. Cut into 8 wedges.
