5 tbsp unsalted butter
1/4 c. vegetable oil
3 garlic cloves, pressed
2 (6 1/2 oz) cans minced clams, drained and juice reserved
1/4 c. chopped fresh parsley
1 c. shredded mozzarella or Monterey Jack cheese
1 (8oz) pkg linguine, cooked

Directions:
Directions:
Melt butter with oil in medium skillet over medium heat. Add garlic and stir until golden (4-5 minutes). Remove from heat. Mix in clam juice and parsley. Return to heat and bring to boil. Reduce heat and simmer 10 minutes. Stir in clams and cheese cook until cheese melts about 3 minutes. Arrange pasta on serving plate. Pour clam sauce over pasta and serve.
