1 lb. Italian sausage, hot or sweet
2 tbsp. olive oil
2 cloves garlic, pressed
1 lg. onion, thick sliced
2 bell peppers, thick sliced
1 can diced Italian style tomatoes
1 sm. can tomato sauce
3 oz. tomato paste
1 tbsp. Italian seasoning
2 tsp. sugar
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried parsley
1/8 tsp. nutmeg
salt and pepper
1 1/2 c. penne pasta

Directions:
Cook pasta per package instructions. Remove casings from sausage and divide each link into quarters. Brown sausage in large skillet over medium heat, adding 1 tbsp. olive oil. Remove sausage once fully cooked, keep warm. Leave drippings in skillet and add sliced onion, peppers and remaining oil. Saute until tender crisp. Add remaining ingredients and return sausage to skillet. Stir in pasta, heat through and serve.

In the summer I use fresh herbs. Be sure to use at least double the amount called for if using fresh.
