1 c dried apricots (Soak 30 mins in water to cover),
2 T shortening,
1/2 c orange juice,
2 t double action baking powder,
1/2 c chopped nuts,
1 c sugar,
1 egg,
1/2 c water,
2 c sifted flour,
1/4 t baking soda, and
1 t salt.

Directions:
Drain and cut apricots with scissors into 1/2 inch pieces. Beat egg, add sugar and shortening, then liquids. Stir in dry ingredients which have been sifted together. Add apricots and nuts. Grease a loaf tim and line bottom with greased paper. Pour in batter and let stand 20 mins. Bake 55 mins in a moderate 350º oven or until wooden toothpick thrust in the center comes out clean. Remove from pan, remove paper and cool on rack.
