2 c. sugar
1 stick butter
1/4 c. cocoa
1/2 c. milk
pinch of salt
1/4 c. peanut butter (creamy or crunchy)
1 tsp. vanilla (good quality, tastes much better)
2 1/2 - 3 c. quick cook oats

Directions:
Directions:
Lay out two cookie sheets or jelly roll pans with parchment paper on them. Keep two spoons or a med/small scoop near by when your ready to scoop out cookies.Set aside peanut butter, vanilla, and oats close to pot.
At this point....your committed, you cannot be distracted or you'll have a mess on your hands! I know from experience!!! HaHa!
In a heavy bottom pot, melt butter then add sugar, milk, cocoa, and pinch of salt. Turn up heat, stirring constantly, until mixture is at a good bubbling boil FOR 2 1/2 MINUTES. Be careful not to burn. Quickly take pot off the heat and add the vanilla, peanut butter, and oats. I start out with 2 1/2 cups of oats and add the rest if mixture is too runny. QUICKLY scoop out cookies on to parchment paper. Allow cookies to set for several minutes. Yummy!
