(Definitely not low calorie, but absolutely awesome!)

Crust:
1-1/2 C Gram Cracker crumbs
¼ C Granulate Sugar
½ C Softened Butter
Cake:
2-8ox packs cream cheese, softened
1-pint Sour Cream
4 Egg yolks
2Tb Flour
1C Sugar
4 Egg Whites

Directions:
Directions:
Mix crust ingredients and press in to bottom of a spring form pan. Bake in 350 oven for about 7-10 minutes to set

Combine all cake ingredients, except egg whites. Mix together well, but some small lumps will not hurt.

In a separate bowl, beat egg whites till stiff and then fold them into the cream cheese mixture. Pour into the pan and bake 40-45 minutes at 375 degrees. (Depending on your oven, 350 degrees might work; sometimes it gets too brown at 375)

When finished, let stand for 1 hour in oven with door open.

This recipe has been passed down for several generations in my family. I remember my grandmother making this treat for our family holiday dinners. It always cracked on the top, just a little, “for character” she would tell us. Crack or no, it is one of the best cheese cakes you will ever have, light, fluffy and full of flavor.
