Nonstick vegetable oil cooking spray
8 large eggs
½ cup whole milk
½ teaspoon black pepper
¼ teaspoon salt
4 ounces sliced ham
1/3 cup grated parmesan cheese
2 tablespoons chopped fresh Italian parsley

Directions:
Directions:
Heat oven to 375 degrees.
Spray two mini muffin tins with nonstick spray
Whisk the eggs, milk, pepper, salt, ham, cheese, and parsley in a large bowl
Fill the muffin cups with the egg mixture
Bake until the egg mixture puffs, about 8-10 minutes
Use a rubber spatula to get the frittatas out of the muffin cups.
Serve warm
