Ingredients: (You can easily adjust amounts of ingredients to your taste.) 1 pound pasta: spaghetti ( your choice of style- this sauce works on about anything , really) ˝ Cup grated Parmesan cheese (Optional) Sauce Ingredients: 2 Can whole plum tomatoes with or without basil …Don’t use puree (too sweet) 1 Bundle of green onions Garlic cloves ˝ Cup fresh basil, chopped ˝ Cup Extra Virgin olive oil

Directions:In a mixing bowl rough-chop the tomatoes cutting off tops, include all juices from cans. Add chopped green onions (white and green parts), small-chopped garlic (I use at least 4-6 cloves- can do more or less to taste), add basil, olive oil, and salt and pepper to taste. Let sit and work at least 1 hour at room temperature. Sometimes I put sauce in the refrigerator for a while to cool off and accentuate the “cold” sauce on the warm pasta. Cook your choice of pasta in lightly salted water until al dente and drain. Immediately, put pasta on individual serving plates/bowls and ladle worked sauce on top. Add cheese as desired, but this sauce works well without. Serve with hard crusted bread and enjoy! |

Notes: I lived in Italy for 2 years and really got hooked on PASTA! This drop-dead easy sauce is a version of just like one so many sauces in Southern Italy that gets its classic taste from all fresh ingredients- what is in the market today! It is perfect for a great pasta meal in the summer as the sauce is not cooked. The sauce needs to sit and “work” at least an hour, so this maybe best suited for a weekend and not one of our busy Real Estate workdays. Anyways, you will enjoy regardless.
