5 lbs. red potatoes
1 lbs. fresh green beans
1/2 cup olive oil
2/3 cup red wine vinegar
1-1/2 rounded teaspoon dried oregano
1-1/2 tsp. salt
1-1/2 tsp. Cavenders Greek Seasoning (more if you like)
3/4 tsp. ground black pepper
2-14 oz. cans artichoke hearts (in water), drained and quartered (or use marinated for a real zip)
1 medium red onion, thinly sliced

Directions:
In large pot, cover potatoes with cold water and bring to boil over medium high heat. Boil until just tender, about 25-30 minutes. Drain and put in colander to cool. When potatoes are cool enough to handle, peel and quarter and put in a large bowl.
Bring another pot of water to boil and add green beans and cook approximately 5-7 minutes then drain and rinse in cold water. Put these into bowl with potatoes along with quartered artichokes and onion. Pour oil and wine vinegar over potato mixture, sprinkle oregano, salt, Greek seasoning and pepper over the top and toss lightly.
Serve immediately or cover and refrigerate. I like it warm but is also delicious cold.
