1 2/3 c. sugar
4 eggs
2 c. or 16 oz solid pack pumpkin (not pie filling)
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 c. oil
2 c. flour (I like to use half whole wheat flour)
2 tsp. baking powder
1 c. chopped nuts (optional)

Frosting:
3 oz cream cheese
1/2 tsp. vanilla
1/4 c. margarine
1 tsp. milk or cream
2- 2 1/2 c. powdered sugar

Directions:

Mix eggs, sugar, oil and pumpkin. Sift together flour, cinnamon, baking soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and mix well. Pour batter into a greased jellyroll pan, bake at 350º for 20-30 min. Cool.

For frosting:
beat together margarine and cream cheese. add vanilla and milk and beat well. Slowly beat in powdered sugar until desired consistency. Spread on cooled pumpkin bars.
