1 lbs. cooked shrimp
1 tbsp. sherry, plus more to taste?
Pinch of thyme
4 scallions, chopped
2 tbsp. butter
one 10 3/4 oz. can condensed tomato soup + one can milk
one 10 3/z oz. can cream of mushroom soup + one can heavy cream
Chopped fresh parsley for garnish

Directions:
Directions:
Finely chop the cooked shrimp and marinate 30 minutes in 2 tbsp.. sherry and the thyme. Saute onions in butter until soft. Add shrimp and cook over low heat for 5 minutes.

In a separate bowl, combine soups with milk and cream. Add to shrimp saute. Simmer over low heat for 5 minutes. Add more sherry to taste. Cool, then mix in blender until thick and smooth. (MUST COOL or it will blow the top off the blender! To serve, reheat in double boiler. Add more sherry to taste and garnish with chopped parsley.
