Cake:
1-1/2 c. boiling water
1 c. oatmeal
1/2 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
1-1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
dash of salt
1 tsp. vanilla
Topping:
6 Tbsp. melted butter
4 Tbsp. milk
3/4 c. brown sugar
1 c. coconut

Directions:
Directions:
Pour boiling water over oatmeal and let stand at least 20 minutes until cooled.
Cream together shortening and sugars. Add the eggs and the cooled oatmeal mixture.
Sift together the flour, baking soda, baking powder, cinnamon and salt. Mix well with the shortening mixture. Add vanilla.
Pour into a greased and floured 9x13 inch cake pan. Bake at 350º for 35-40 minutes.
While cake bakes, mix all topping ingredients (butter, milk, sugar, coconut) in a pan over heat until sugar is dissolved. Spread over hot cake and sprinkle with nuts if desired. Place under broiler for 1 minute. Watch carefully so it does not burn.
