1/4 c. olive oil
4 chicken breasts cut into 1/2 in. strips
1/2 pound mushrooms, sliced
1 med. onion, chopped
2 garlic cloves, minced
1 (16 oz) jar marinara sauce
1 c. mozzarella cheese, shredded
1/4 c. grated Parmesan cheese
2 T. chopped Parsley
1 (16 oz) box spaghetti

Directions:
In a wok, heat 2 T. oil over high heat, swirling to coat sides of pan. Add chicken strips and stir until cooked through but still juicy- 3-4 min. Remove to a plate.
In the same wok, heat remaining 2 T. olive oil over high heat. Add mushrooms, onion, and garlic. Stir fry until mushrooms are lightly browned- 3-5 min. Return chicken to walk.
Pour in marinara sauce. Cook until heated through, about 3 min. Add mozzarella and Parmesan cheese. Sprinkle parsley on top. Cover and cook until mozzarella melts, 1-2 min. Serve over a bed of cooked spaghetti.
