1 CUP CHOPPED ONION
2 TEAS SALT
1/4 TEASPOON PEPPER
1/2 TEASPOON DRIED THYME
1/2 TEASPOON PAPRIKA
1/8 TEASPOON NUTMEG
3 LBS EYE OF ROUND ROAST
6 STRIPS LEAN BACON

Directions:
PREHEAT OVEN 325F.
SPREAD ONION IN BOTTOM OF ROASTING PAN.
COMBINE SALT, PEPPER, PAPRIKA, NUTMEG, THYME, AND RUB MIXTURE INTO ROAST.
LAY THE SIX SLICES OF BACON ACROSS THE ROAST.
ROAST FOR 1 1/2 HR TO 2 HRS TILL THE THERMOMETER READS 140-160 DEGREES. LET THE ROAST SIT FOR HALF HR COVERED LIGHTLY WITH FOIL, TO REDISTRIBUTE THE JUICES.

SLICE VERY THIN , SERVE WITH ONION GRAVY
