STRAWBERRY GLAZE PIE
Crush 1 cup fresh strawberries and cook with 1 cup water about 2 minutes; sieve.
Combine ¾ cup sugar and 3 tablespoons cornstarch; stir till thickened and bubbly. Add few drops red food coloring. In a baked and cooled cookie dough crust, place 1 ½ cup of fresh strawberries. Pour half the sauce over. Repeat layers with 1 ½ cups berries and remaining sauce. Chill.

COOKIE DOUGH CRUST (for strawberry pie)
½ cup butter, 2 tablespoon sugar, 1 cup flour
Cut butter into sugar and flour which have been mixed together. Form into ball with hands. Press gently into bottom and sides of 9 inch pie pan. Refrigerate 30 minutes. Bake at 375 degrees for 12-15 minutes. Cook before using.

This recipe was discovered in my grandmother recipe collections. I have made hundreds of strawberry pies since the early 70’s. What makes this pie unique is the cookie dough crust.
