"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1/8 cup butter
1 stalk celery
1 sm onion
1 teaspoon parsley, chopped
1 chopped garlic clove
7-8 large peeled tomatoes
1/2 can tomato paste
1/2 teas salt
1/2 teas pepper

2 large carrots, minced small
3 teas Bristo gravy mix [optional]

Directions:
Directions:
Except for the tomatoes, brown all veggies in butter.
Add the rest of ingredients, cook until tender, approximately 50 minutes.

I will use this as a pasta sauce, or as a sauce for chicken or beef; just include the meat and simmer until done. The sauce will be thicker at the end of the cooking time. This is nice over rice, pasta, etc.
