Ingredients:  
1/2 lb of vermicelli,broken in half and cooked in salted water for 4 minutes;

1 cup of dressing to follow:

1 3lb. chicken cooked and chopped ( I use one rotisserie chicken );

1 c. mayonnaise;
chopped parsley;

1 can of artichoke hearts, drained;


Dressing: 1/4 c. wine vinegar;

1 tsp. Dijon mustard;
2 tsp. chopped garlic;
salt and pepper to taste;
1/2 cup virgin olive oil;

Mix vinegar,mustard,garlic,salt and pepper. Whisk in olive oil. To assemble: mix vermicelli with dressing in a large bowl and refrigerate overnight. Next day, add chicken and mayonnaise and artichokes and refrigerate until ready to serve (overnight if possible). Garnish with chopped parsley.
