6 - 8 large portabella mushrooms (stems removed)
1 - 28 oz. can diced tomatoes
6 - 8 cloves of garlic diced
8 - 10 fresh basil leaves chopped
crumbled feta

Directions:
Directions:
Bake mushroom caps at 350 degrees for approximately 15 minutes to remove moisture. (Hint - if you turn them over after about 8 minutes, it will speed up the process.)
Season diced tomatoes, including juice, with garlic and basil, according to your taste and simmer 15 - 30 minutes to reduce moisture. Salt and pepper to taste (store bought marinara can be substituted). Top each mushroom with generous amount of tomato basil mixture and top with feta and bake @ 350 degrees approximately 15 minutes until cheese browns and heated through.
