2 cups raw rice, cooked
1 cup onion, chopped
1 cup green peppers, chopped
1 cup celery, chopped
1/4 lbs. bacon, diced and browned
1/2 tsp. poultry seasoning
1 tsp. allspice
1 tsp. marjoram
1 tsp. oregano
1 bay leaf
salt & pepper
1 regular size tomato sauce
1/2 can tomato paste
1 - 1/2 lbs. chicken, shrimp, sausage, pork - cut up

Directions:
Directions:
Saute vegetables in bacon drippings - reserve bacon.
Add sauce, paste, seasonings & meat or shrimp; simmer 45 minutes to 1 hour, combine with rice.
Make a day or two ahead and refrigerate - microwave to serve. Freezes well.
