1 lbs. uncooked shrimp (20-30 count per lbs. will yield 3 skewers/servings)
Wooden Skewers
1 bottle liquid Mojo Marinade (Badia brand or equal)
1 bunch fresh Cilantro
Fresh Limes

Directions:
Directions:
Peel and devein shrimp leaving tail section on and wash with cold water
Thread 7 - 8 shrimp on each skewer so they all curve in the same direction (using 2 skewers instead of one makes turning them easier).
Trim the ends of the skewers (if necessary) so they can all lay flat in a glass dish.
Pour the mojo marinade over the shrimp to cover completely. Allow to marinade for 2-3 hours only - NOT overnight or the shrimp will get mushly.

Use a very hot cast iron grill pan for the next step, but can also use a charcoal or gas grill. Grill the shrimp over high heat for 1-2 minutes until they turn pink 1/2 way thru and turn them over and grill for another 1-2 minutes until they are just done. Do not over cook. Remove immediately from pan and place in a clean flat dish and squeeze a little fresh lime juice on the shrimp and sprinkle generously with fresh chopped cilantro. Also works with any kind of fish like mahi - mahi.
