Grandma's Lasagna Recipe

16oz package part-skim mozzarella (moot)
about a pound of sausage - links or that swirl pkg
box of lasagna noodles
sauce (w/o meat) - I use about 2 cans Hunts sauce
32oz part-skim milk ricotta
4 eggs
1/2 cup parsley
1/2 cup Parmesan

Preheat oven to 375º

1. Cook the lasagna noodles to package directions, cool on wax paper.
2. Brown the sausage, then slice in 1/4" rounds
3. Cut the block of moot - cut in quarters then slice.
4. Divide the sausage and moot into 3 equal piles.
5. Beat the eggs in a large bowl. Mix in the ricotta, parsley and Parmesan.

Now you're ready to build the layers!
1. In a large pan (known as a lasagna pan) put a small amount of sauce on the bottom to lightly cover it.
2. Place a layer of noodles on the sauce, then ricotta mixture, sausage, moot and sauce.
3. Lather, rinse repeat - repeat step 2 twice more.
4. Top with noodles then sauce.

Bake 45 minutes uncovered. Let set 15minutes covered then serve.

This is my kids absolute favorite meal. Most birthday dinners are Lasagna. I got this recipe from Mom; she told it to me from her memory. Makes a lot and is great!
