1/4 cup olive oil
1/4 cup butter
1 stalk chopped celery
1 diced onion
1 28 oz. can crushed tomatoes
1 cup tomato juice
2 cups clam juice
2 cups white wine
4 cloves garlic, crushed
juice of 1 lemon
1 bay leaf
2 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon red pepper flakes
1 lb cooked crab meat
2 lbs halibut, cut into 1 in pieces (cod works as well)
24 large prawns, peeled and deveined
12 mussels, cleaned and debearded
1/2 bunch chopped Italian parsley

1. In a large pot, melt butter and olive oil on medium-low heat and saute celery and onion until soft.
2. Add remaining ingredients except seafood and parsley. Simmer uncovered for one hour.
3. Add salt and pepper to taste, and water if stew becomes too thick.
4. Add crab, halibut and prawns. Simmer covered for 5 minutes.
5. Add mussels. Simmer covered another 3 minutes.
6. Remove from heat and stir in parsley.
