1 1/4 Cup Shortening
2 Cups Sugar
2 Tsp Baking Powder
1 Tsp Baking Soda
1/2 Tsp Ground Nutmeg
1/4 Tsp Salt
2 Eggs
1 Tsp Vanilla
1/2 Tsp Lemon Extract
4 1/2 Cup Flour
1 Cup Buttermilk or Sour Milk*
Sugar, Fine Sanding Sugar, Coarse Sugar or Colored Coarse Sugar

In a large mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds. Add the 2 cups sugar, the baking powder, baking soda, nutmeg, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs, vanilla, and lemon extract until combined. Alternately add flour and butter milk, beating until combined after each addition. Divide dough in half. Cover and chill dough about 3 hours or until it is easy to handle.
Preheat oven to 375ºF. On a lightly floured surface, roll half of the dough at a time until 1/2 inch thick. Using 2 1/2 inch round cookie cutter, cut out dough. Place cutouts 2 1/2 inches apart on an ungreased cookie sheet. Sprinkle with desired sugar. Bake about 10 minutes or until set and edges just begin to brown. Transfer to a wire rack and let cool.

*To make sour milk, in a glass measuring cup stir together 1 tbsp lemon juice or vinegar and enough milk to make 1 cup. Let stand for 5 minutes.
