One part chicken thighs
One part jalapeņo peppers (1 pepper for each thigh)
Two parts bacon strips (2 strips for each thigh)
Cream Cheese (see notes at end)

Directions:
Directions:
Open and de-seed jalapeņos. Stuff with cream cheese.
Lay chicken thighs flat, cover with plastic wrap. Pound with mallet to flatten.
Set one jalapeņo on each chicken thigh.
Roll each thigh around the pepper.
Roll two strips of Bacon around each thigh, securing with a toothpick. Season with salt and pepper.

Use any heat source convenient: gas, charcoal, electric oven. Cook until the chicken reaches 165 degrees.

Due to the cream cheese, this is not strictly Paleo, but is OK as an occasional indulgence. For a "cleaner" version of cream cheese: strain high-quality yogurt through cheese cloth (several layers) overnight in the fridge. It's still not 100% Paleo, but is healthier than the processed cream cheese with lots of additives. There is also a recipe in this cookbook for Cashew Sour Cream/Cream Cheese that might work (haven't tried it).
